Chocolate Chip Cookies

Ingredients

  • 1/2 cup unsalted butter, melted

  • 1/3 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 cups all-purpose flour

  • 1 cup semi-sweet chocolate chips

  • 1/2 Cup of Chopped Pecans

Instructions

  1. Place melted butter in a large bowl. Add granulated and brown sugars and mix on low speed until the mixture is smooth. Mix in egg and vanilla extract and mix on low speed until combined.

  2. Mix in baking soda and salt, then slowly mix in flour and mix just until the batter is smooth and comes together. Slowly mix in chocolate chips and pecans.

  3. Line a cookie sheet with a silicone baking mat. Scoop 2 tablespoon balls of dough onto the cookie sheet. Spacing doesn’t matter. Cover with plastic wrap and chill for at least 2 hours.

  4. Preheat oven to 350°F. Line a second cookie sheet with a silicone baking mat.

  5. Remove the chilled cookie dough balls from the refrigerator and space them 2-inches apart on the cookie sheets. Bake (2 tablespoon sized cookies) for 11-15 minutes, or until the edges are a light golden. Let the cookies cool on the cookie sheets at least 10 minutes before serving.

Chocolate Chip cookies are my absolute favorite dessert! I have always been a fan of the cookie corner cookies and what makes this recipe so delicious is letting the cookies chill in the refrigerator. Enjoy!

White Chocolate Macadamia Nut Cookies

Ingredients

  • 2 1/2 cups All-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 3/4 cup salted butter, softened

  • 1/2 cup granulated sugar

  • 1 cup brown sugar

  • 1 large egg

  • 1 large egg yolk

  • 2 teaspoon vanilla extract

  • 1 1/4 cups white chocolate chips

  • 1 cup roasted salted macadamia nuts, chopped

  • 1 teaspoon milk


Instructions

1. Combine the flour, baking soda and salt in a medium sized bowl.

2. Cream the butter and sugars together in a large mixer bowl on low speed. You will see a color change and continue to scrape down the sides of the bowl.

3. Add the egg and egg yolk one at a time and mix until well combined.

4. Add the vanilla extract and mix until well combined.

5. Add the dry ingredients and mix until the dough is just combined.

6. Add a teaspoon of milk and combine on low speed just until incorporated. Use a spatula to finish combing the dough and help it come together.

7. Stir in the white chocolate chips and macadamia nuts.

8. Create 2 tablespoon sized balls of cookie dough until all the cookie dough has been used.

9. Refrigerate the cookie dough for at least 3 hours. After refrigerating them, let them sit at room temperature for about an hour before baking to come closer to room temperature. I always have tried cooking them fresh from the fridge and still tastes the same! You would have to adjust the cook time.

10. Preheat oven to 350°. Line baking sheets silicone baking mats to help keep the bottom of the cookies soft.

11. Bake cookies for 9-10 minutes. Remove just as the edges begin to turn golden. Don’t over bake. The cookies will be a little puffy when you take them out of the oven. They will cool nicely!!

12. Remove cookies from the oven and allow to cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely. Make sure you leave them on the sheet! This allows them to cook a little more.
