Banana Bread with Pecans

Prep Time: 20 Minutes Cook Time: 55 Minutes Total Time: 1 Hour & 15 minutes Servings: 10 Slices

Ingredients:

  • Nonstick baking spray

  • 8 tablespoons salted butter, melted

  • 1 cup packed light brown sugar

  • 2 large eggs

  • 2 tsp pure vanilla extract

  • 4 ripe bananas, mashed

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp kosher salt

  • 1 cup chopped pecans (I love my pecans!) (You can add any other mix-ins of your liking!

  • 4 tablespoons granulated sugar as desired

Instructions:

  1. Preheat the oven to 350 degrees F. Spray a 9 x 5-inch loaf pan with nonstick baking spray or line it with parchment paper.

  2. In a large bowl, beat together the butter, brown sugar, eggs, and vanilla until well blended. Add the bananas until combined.

  3. In a medium bowl, whisk together the dry ingredients: flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and beat just until combined. Add the pecans until well blended.

  4. Pour the batter into the prepared pan and spread it evenly. Sprinkle the sugar over the top. (This makes a huge difference!)

  5. Bake for 50-60 minutes. Let the bread cool slightly in the pan on a rack. Slice and serve warm.

Banana Bread is one of my favorites! I love incorporating pecans to all of my baked goods. I feel it adds an extra level of flavor that makes is over the top delicious. I have tried this recipe with chocolate chips instead of pecans and didn't like it as much. I am not a fan of bananas and chocolate chips as well. Enjoy!
