Jeff's Loving Beef Stew

Ingredients:

  • 2 lbs beef stew meat cut

  • 1 package of McCormick Beef Stew Seasoning

  • 3 tbsp flour

  • 2 tbsp oil

  • 4 cups of water

  • 1 cup Onion freshly chopped

  • 1 1/2 cup Celery (cut)

  • 1 1/2 cup Carrot (cut)

  • 2 Cups Potato (cut)

*You can add as much or as little vegetables. I prefer a lot of celery in mine.


Instructions:

  1. Coat beef with flour. I only needed 2 tbsp of flour for mine. Heat the oil in a large pot. Add the beef until the meat is no longer red.

  2. Add water and season mix.

  3. Bring to a boil, reduce heat and letter it simmer for one hour. Then add all the vegetables and let it simmer for an additional hour. Try to stir it every 20 minutes and wait until meat and vegetables are tender. Continue to add 1 tbsp of flour to desired thickness. Serve with rice.

Beef stew is a local favorite here in Hawaii. You can find it in almost any restaurant here! We love making this and is super easy to make. Our preferred side dish is rice because we eat rice with everything. Enjoy!

Creamy Beef Pasta

Prep Time: 10 Minutes Cook Time: 20 Minutes Total Time: 30 minutes Servings: 8

Ingredients:

  • 2 tbsp olive oil

  • 1 Cup of Diced Onion

  • 2 pounds ground beef

  • 2 cloves garlic, minced

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 2 tsp kosher salt

  • 1/2 teaspoon crushed red pepper

  • 1/4 cup flour

  • 1 (28 oz) can tomato sauce

  • 1 cup beef broth

  • 1 Box Rotini pasta

  • 1 cup heavy cream

  • 2 cups grated sharp cheddar cheese

Instructions:

  1. In a large, deep skillet heat the olive oil over medium heat. When the oil is hot, add in the diced onions and sauté for 6 minutes, until they begin to soften. Add in the ground beef to the skillet and break the meat apart. Cook until no pink remains. Drain excess grease (There will be a lot of grease) and return the to heat.

  2. With the heat still on medium, add in the garlic, basil, oregano, salt, red pepper, and flour. Cook for 3 minute, stirring constantly to coat. Make sure the flavors soak into the meat.

  3. Add in the tomato sauce and broth and stir to combine. Bring to a boil and simmer for 20 minutes.

  4. While sauce is simmering, boil Rotini according to pasta directions. Drain.

  5. Add the cream and mix it in for five minutes. Add pasta to the sauce, stirring to combine. Add in the cheese and stir until melted.

  6. Simmer for 7 minutes and then it's ready to serve!

Have you ever had the Hamburger Helper Beef Pasta? This meal gave me the idea of trying to make it from scratch and I was surprised when it all came together! This was a hit for our house. When you add the heavy cream to the sauce it gives it a nice thicken sauce. I added freshly grated parmesan on top to garnish. Enjoy!
