Chicken

Micah's ALL Katsu

Ingredients:

Chicken:

  • 8 Skinless, boneless chicken thighs - pounded to 1/2 inch thickness (Micah used a rolling pin)

  • 1/2 Cup all-purpose flour

  • 2 Egg, beaten

  • 1 tbsp Water

  • 3 cups Panko bread crumbs (Japanese Bread Crumbs)

  • 2 cup oil for frying, or as needed

Sauce:

  • 1 Tbsp Ketchup

  • 3 tsp Worcestershire Sauce

  • 1 ½ tsp Sugar

  • 1 ½ tsp Oyster Sauce

Instructions:

Chicken:

  1. Pound the chicken to your desired thickness. Place the flour, egg (add the water) and panko crumbs into separate shallow dishes. Coat the chicken breasts in flour, shaking off any excess. Dip them into the egg and water mixture (You want the egg mixture runny), and then press into the panko crumbs until well coated on both sides.

  2. Heat 1/2 inch of oil in a large skillet over medium-high heat. Place chicken in the hot oil, and cook 4 or 5 minutes per side, or until golden brown.

  3. Place the chicken on a cooling rack with a paper towel under the rack to cool. Then cut the chicken into pieces to your liking. Serve with your desired. We love our rice!

Sauce:

  1. Combine all the ingredients in a small bowl and whisk together. Adjust the sauce according to your liking! Micah likes to add more Worcestershire Sauce to his sauce.

Aunty Moana's Chicken Alfredo

Ingredients:

Chicken:

  • 2 tablespoons butter

  • ½ teaspoon dried oregano

  • ½ teaspoon dried basil

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • Penne Noodles (cooked and drain)

Sauce:

  • 1/2 Cup unsalted butter

  • 1 (8oz) package of cream cheese, cubed

  • 1/2 tsp italian seasoning

  • 3 tsp freshly minced garlic

  • 2 cups milk

  • 2 cups grated Parmesan Cheese

  • pepper as desired

Instructions:

Chicken:

  1. In a pan over medium-high heat, melt butter. Season the chicken with salt, pepper, oregano, and basil. Place in the pan.

  2. Cook 8-10 minutes or until chicken is fully cooked. Remove from heat and set chicken aside.

Sauce:

  1. Using the same pan, melt the butter in a medium sauce pan over medium heat. Add minced garlic and saute for about 30 seconds.

  2. Add the cream cheese cubes an italian seasoning. Stir with a whisk to smooth out large lumps. Slowly pour in milk, about 1/4 cup at a time, and continue to whisk until smooth.

  3. Add parmesan cheese and pepper. Still well to combine and cook and stir for a few minutes, or until desire thickness. Add the chicken into the sauce and Serve with you favorite type of pasta. Mine is Penne!

This recipe was fun because I used my new garlic press and it is a game changer!! It makes crushing garlic so much easier and faster. Aunty would make this recipe at the house when she was trying new alfredo recipes. This recipe was one of my favorite of hers. Enjoy!
