Toasted Ravioli

Ingredients:

  • 1 1/2 pound bag of beef ravioli frozen

  • 1 cup buttermilk ( I used Milk and 1 tbsp of Lemon Juice)

  • 2 eggs

  • 2 cups Italian bread crumbs

  • 1 1/4 teaspoon salt

  • 1 1/4 teaspoon black pepper

  • Vegetable oil

  • Parmesan cheese (freshly grated taste better and for presentation)

  • Marinara sauce of your choice

Instructions

  1. In a small bowl, mix buttermilk and eggs together.

  2. In medium bowl, mix bread crumbs, salt, and pepper together.

  3. Dip each ravioli in the milk mixture and then press into the bread crumbs, coating both sides of the ravioli well. Place on a large baking sheet.

  4. Place the breaded ravioli in the freezer for about 30 minutes to keep the coating on. While you are waiting, fill a deep pot with 2 inches of oil and heat to 350 degrees F.

  5. Working in batches, place several ravioli in the oil. Cook for 5 minutes, flipping halfway, until golden. Remove from the oil and place on a paper towel lined plate or pan. Sprinkle with Parmesan cheese. Serve warm along with marinara sauce for dipping.

I kept my ravioli's frozen and I did not thaw mine. Frozen or fresh would work for this recipe. My parents loved Olive Garden and we used to always get this as an appetizer. I would always look forward to eating these. Jeff rates these a 4.5/5 stars. Enjoy!

Sausage Dip

Prep Time: 5 minutes Cook Time: 25 minutes Total Time: 30 minutes Servings: 8

Ingredients:

  • 1 tsp olive oil

  • 1 pound bulk sausage (I prefer Jimmy Dean)

  • 14.5 ounce can Rotel

  • *8 or 16 ounces cream cheese cut into pieces

  • Favorite chips to dip

Instructions:

  1. Add olive oil over a medium-sized skillet over medium heat.

  2. Add sausage and cook until browned, breaking apart the meat.

  3. Drain off excess grease and return to stovetop over medium-low heat.

  4. Add cream cheese and Rotel (don't drain) and stir frequently until cream cheese is completely melted. *You can decide if you want more cream cheese if you like. I personally only like 1 package of cream cheese because I prefer more meat in my dip. If you are serving for a crowd, then I would use two packages of cream cheese.

  5. Serve warm with your favorite chips.

This was a favorite of mine from my Tia Gab! She would always make this at her house when we had get togethers and I enjoyed making this to relive the memories. Enjoy!
